It’s spring in Florida, which means the sun is shining—and soon, it’ll be steaming hot every day. As the seasons change, so do our drinking habits. Guests begin to put down the red wines and dark beers in favor of something light and crisp, like a chilled white wine or a pale ale. Fresh juices and botanicals start making more appearances in drinks—and not just in cocktails.
In today’s bar world, mocktails have gone from afterthought to trendsetter. Gone are the days of the basic Shirley Temple. Now, mocktails are aesthetically pleasing, refreshing, and—most importantly—thoughtful.

Mocktails also bring a sense of celebration to underage or alcohol-free events, offering sophistication without the spirits. Every guest I’ve encountered who orders a mocktail has expressed genuine appreciation—not just for the drink itself, but for the fact that someone thought to include them.
